This is how Abel Alvarez, from his restaurant Gueyumar in Playa de Vega, hit upon the idea of playing with fire. Only the finest of seafoods are chargrilled and then canned in the most heavenly olive oils. A painstaking process, searching for the finest marine treasures before they meet with aromas of birch wood, beech, oak and eucalyptus.
