Gueyumar Charcoal Grilled Wild Red Tuna Morrillo
Morrillo or neck of tuna, incredibly smooth, juicy and rich. It is one of the prized parts of the Red tuna since each tuna only yields a gem sized portion. Similar to the belly (ventresca) for its content in fat, but firmer in texture. Charcoal grilled over wood and then tinned in extra virgin olive oil and a pinch of salt.
